First things first, we need to get our chicken ready.

Chicken breasts can be a bit uneven, so we want to flatten them out. This way, they'll cook evenly, and you won't have any parts that are overcooked or undercooked. To do this, place the chicken breast between two pieces of plastic wrap or in a plastic bag and gently pound it with a meat mallet or even a rolling pin until it's all the same thickness.

Next, we're going to give our chicken a special coating to make it crispy.

We start by dredging, which means covering the chicken in flour. The flour helps the egg stick to the chicken. After that, dip the chicken into a bowl of beaten eggs. Finally, coat the chicken with panko breadcrumbs. Panko is a type of breadcrumb that's light and makes the chicken extra crispy when fried.

Now, it's time to heat things up!

Pour some oil into a frying pan—enough to cover the bottom—and place it on medium heat. You want the oil to be hot enough to sizzle when you add the chicken, but not so hot that it burns. A little trick is to drop a breadcrumb in the oil; if it bubbles and turns golden, you're good to go!

Carefully place the coated chicken into the hot oil. Let it fry until it's golden brown and cooked through. This usually takes about 4-5 minutes on each side. Be patient and make sure to flip it gently so the crispy coating doesn't fall off. When it's all nice and golden, it's ready!

Once the chicken is perfectly fried, take it out of the pan and let it drain on paper towels. This helps soak up any extra oil, keeping the chicken crispy and delicious. To finish it off, serve your Chicken Katsu with some katsu sauce. It’s a sweet and tangy sauce that goes perfectly with the crispy chicken. You can even add some rice or salad on the side for a complete meal.
